Passover is a Jewish celebration celebrating the exodus of the Israelites from Egypt. Jews in Gibraltar crush a small piece of brick in their Charoset. Some activists put olives on the seder plate to symbolize their hopes for peace in the middle east.

Spinach & Feta pie, a celebrated Gibraltarian dish:
Ingredients: Yield: 4-6
Preparation time: 30 mins + 30 mins resting time
Cooking time: 35-40 mins
Main Ingredient: Spinach, Feta 3 Bunches of Spinach
3 Cups of Hard Edam Cheese
1/4 Cup Breadcrumbs
1/2 Cup Oil
3 Garlic Cloves
Salt And Pepper
5-6 Eggs For Mixture
4 Eggs In Pie
Parsley
1/2 Cup Of Water
1/2 Cup Oil
Salt
Sufficient plain four to form a ball (see instructions)
Instructions:
1. Preheat oven to 200c
2. Wash the spinach after removing the thick white stalks. Roll up the leaves and cut very fine, place in a bowl with salt and plenty of boiling water to cover.
3. Whilst spinach is in the boiling water make up the pastry.
4. Mix all the pastry ingredients into a ball and set aside for a while.
5. Now drain the spinach very well, squeeze all the water from the spinach and place it in a big bowl, add the beaten eggs, grated cheese and breadcrumbs, salt, pepper, garlic, parsley and the oil. Mix together very well.
6. Line an oven dish with half of the dough
7. Fill with the spinach mixture and make four wells in the mixture and crack the remaining four eggs sparingly. Cover with the remaining dough, brush the top with a beaten egg.
8. And bake in the preheated oven until pastry is golden brown.
Raisin fritters with Golden Syrup:
Ingredients:
Yield: 10-12
Preparation time: 15 minutes
Cooking time: 15 mins Main ingredient: Raisins
Half a pound of self raising flour
Half pint water
2 tablespoons sugar
1 tot brandy
Quarter pound raisins
Cinnamon
Golden syrup (Tate & lyle or other brand)
Oil to fry
Instructions:
1. Sieve flour into a bowl, add sugar and water and stir. Add brandy and raisins. Mix well.
2. Heat oil in frying pan and add spoonfuls of mixture.
3. Once all mixture is done (fritters are golden brown), heat syrup and dip each fritter in it.
4. Finally, sprinkle with cinnamon.
Calentita:
Ingredients:
Yield: 2-3 servings
Preparation time: 15 mins + 2-3 hours resting
Cooking time: 1 hour
Main ingredient: Chickpea flour
1 1/2 pints water
250grs = 1 pkt chickpea four
1 small glass olive oil
salt and pepper
Instructions:
1. Mix together the chickpea flour and water overnight or 2 – 3 hours before cooking with salt and pepper in a bowl. Place to one side.
2. Preheat oven to 225°C.
3. Grab your oven dish and pour enough oil to cover the bottom of the dish.
4. Place your dish in the oven to heat it up, once the oil is hot, using a brush, spread along all the sides of your dish, stir your mixture and pour immediately into your dish.
5. Place this back in oven for an hour at 200°C

Yield: Makes about 4 cups
Ingredients: 3 medium Gala or Fuji apples, peeled, cored, and finely diced
1 1/2 cups walnut halves, lightly toasted, cooled, and coarsely chopped
1/2 cup sweet red wine such as Manischewitz Extra Heavy Malaga
1 1/2 teaspoons ground cinnamon
1 tablespoon packed brown sugarSmall ground up brick (not a typo!!!)
Preparation
In large bowl, stir together all ingredients (even the bricks). Store, covered, at room temperature until ready to serve.
